Mix eggwhite,soy, cornflour and pepper into a smooth gooey past. Cut beef into thin strips and whack in the marinade and squelch around so they're all covered. Leave for 5-10minutes. No more no less before cooking.
Heat wok on quite high. Add a tblspoon or so of olive and get ready for mess. A few pieces at a time (no more!) add beef strips to the wok. After 30 seconds turn. After another 30 removed and place on a paper towel. Set aside meat and cover with another paper towel.
At this point place julienned carrots in a dish of boiling hot water and let sit until needed.
Changes to come
Stir fry onion, garlic, ginger, 5 spice, paprika and chilli in 1-2tblspoons of Olive oil for 3 minutes or until onion is starting to go translucent. Add capsicum, carrots and whatever other veges take your fancy. Mushrooms are good too. Stir fry a further 2-3 minutes. Add meat and allow to heat through. Add sauce and noodles (pre-soaked if necessary) and heat through thoroughly.
Done. Serve alone or with plain rice.
